I think animal symbolism depends on the context (time period, religion, ethnicity)
The duck is the symbol of honesty and simplicity in celtic arts.
In Feng Shui a golden pig is the symbol of honesty and tolerance.
I've read bees and frogs as symbols of honesty as well but I really haven't ever found any back up for that.

It depends on the culture.
In Celtic myths it is a duck.
Cows, frogs, ants, and bees supposedly symbolize honesty too.
